Summers are for salads! Actually I can get down with a salad anytime of the year. Doesn’t matter the temperature or time of day (hello breakfast salad!), any kind of salad is good with me. Although, it has to be a good salad. I’m not talking about some iceberg lettuce, shredded carrots, and cucumbers like you would get at some restaurants. I’m all about lots of toppings, heathy fats and protein to keep you full, and a delicious dressing. And this peach and pistachio salad with grilled chicken hits on all those notes 🙌🏻
While you will usually find me throwing together random ingredients or leftovers in a salad, sometimes I put some thought into them. And this is one of those cases and it is an amazing combo! You wouldn’t think peaches and pistachios would go together so well, but man it works. It gives you that sweet and salty combo, which is one of my favorites!
Peach and Pistachio Salad with Grilled Chicken
This peach and pistachio salad comes together rather quickly, is really simple to make, and calls for basic pantry/fridge staples. The recipe says it takes an hour, but it really doesn’t. Most of that time is the chicken marinating or it cooking on the grill. The actual assembly takes less than 5 minutes once everything is ready. This is what you’ll need:
- chicken breast
- arugula
- peaches
- pistachios
- lemon juice
- olive oil
- honey
- ground ginger
- salt and pepper
All you need to do it marinate the chicken, grill it, make the dressing, and then assemble!
I made this salad when my family was here last month and they ate it up! My mom doesn’t eat chicken so she added some goat cheese instead and said it was awesome, so if you do dairy, some goat cheese would pair well here. If you are on the Whole30, you can leave out the honey in the dressing to make it compliant. It makes for a perfect patio dinner or even meal prep! Just store the dressing on the side until ready to eat!

Peach and Pistachio Salad with Grilled Chicken
ingredients
Peach and Pistachio Salad
- 1 pound chicken breast
- 5 ounces arugula
- 2 medium peaches, sliced (200 grams)
- 1/2 cup shelled pistachios
- 1/4 cup lemon juice
- salt and pepper
Honey Lemon Vinaigrette
- 3 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 tablespoon honey*
- 1/2 teaspoon ground ginger
- salt and pepper, to taste
instructions
- Marinate chicken in 1/4 cup lemon juice and season liberally with salt and pepper and let sit for 30 minutes or as long as overnight. After it is done marinating, light grill to medium-high heat. Once hot, grill chicken for 20-25 minutes until cooked through.
- While chicken cooks, make the dressing by whisking everything together. Toss the arugula, peaches, and pistachios with the dressing. Top with grilled chicken and enjoy!
