Zucchini noodles with blistered tomatoes & basil – my ode to the end of summer. Cue all the crying face emojis 😭😭😭
Okay, I’m not that sad about it because it will still be like 90 degrees here in Austin for 2 more months, so not much will change except the appearance of fall foods (I’m talking to you pumpkin). But with Labor Day this weekend, summer is pretty much over. So I’m sharing one more seasonal recipe packed with a bunch of summer things – zucchini, cherry tomatoes, and basil!
This recipe is really so simple, it is barely a recipe. But sometimes simplicity is key. Having the job as a food blogger, you are constantly in create mode – creating new recipes, new flavor combos, how to use ingredients in fun new ways. Don’t me wrong, I absolutely love it and it gives me life, but I also love super simple meals like this. Most nights were are eating some kind of protein, easy carbs (potatoes, rice, quinoa), and a couple veggies. Nothing complicated, which is exactly what this recipe is.
Zucchini Noodles with Blistered Tomatoes & Basil
If you have a basic garden, you could totally make this meal by just going outside and picking your own produce. That was my intentions this summer, but things didn’t turn out as I planned (aka everything died). But that’s okay, because it’s only a few ingredients you need to pick up the store.
- zucchini or prepared zucchini noodles
- cherry tomatoes
- fresh basil
- butter
- salt
My favorite part of these zucchini noodles with blistered tomatoes is something that you don’t see me use often. I actually avoided it like the plague for so long because it was pure fat and I thought that was bad for you. We are talking about butter. I’m not saying eat all the butter you want, but everything in moderation. It takes these simple ingredients and elevates the flavors so much. When I made this the second time to photograph, I ate the whole stinking pan. So simple, but so tasty.
If you don’t do butter, you can totally sub ghee or coconut oil. Ghee will give it the same buttery taste!
Its takes all of about 5 minutes to make and is the perfect summer side dish. You can also top it with some protein for a complete meal – I’m thinking chicken or shrimp would be amazing. I hope you enjoy the simplicity of this recipe and the end of summer.

Zucchini Noodles with Blistered Tomatoes & Basil
ingredients
- 1 tablespoon butter*
- 1 pint cherry tomatoes
- 1 container Cece's Veggie Noodle Co zucchini spirals (or 2 medium zucchinis, spiralized/300 grams)
- fresh basil + more for topping
- salt and pepper, to taste
instructions
- Add about 1 tablespoon butter (or ghee, coconut oil...) to a medium sauté pan over medium heat and let it get hot, about 30 seconds. Add a pint of cherry tomatoes and salt and sauté for 2-3 mins until blistered.
- Turn down to low and add zucchini spirals, fresh basil, and salt and pepper. Sauté for about 30 seconds or until desired doneness. Top with more fresh basil and enjoy!
