Paleo Coconut Ginger Lime Mocktail! This light and refreshing mocktail is made with sparkling water, coconut milk, lime, and ginger, has no added sugar or sweeteners, and makes a perfect summer drink for the whole family! Gluten free, vegan, paleo, and Whole30 friendly too!
Summer is right around the corner! And you know what else is…Cinco de Mayo! And that means margaritas and chips and dip and tacos and all the things!! I legit love Cinco de Mayo. I’m not sure why…maybe it’s my love for a spicy margarita or the endless amount of chips I can eat. Either way, it’s a fun holiday.
As of right now, I am currently on the Whole30 though! And that means no alcohol. But I’m totally okay with that as there are a bunch of fun alternatives you can do to make you feel like you are part of the fun, like a mocktail! When I first heard the term mocktail, I had no idea what it meant. After a little research, I figured out it was a alcohol free beverage!
You can pretty much make any cocktail recipe a mocktail with a few substitutions. You can also get creative and add whatever you like to them!
To be honest, I wasn’t about mocktails when I discovered them a few years ago. Why would you want to drink a fun drink without alcohol. Well times have changed and I am embracing them more and more. I don’t need alcohol to have fun and if you have specific health and fitness goals, alcohol just adds on excess calories and carbs that could be hindering getting to your goals.
Now I’m not saying you can’t enjoy it every once in awhile, but you don’t have to be drinking it every weekend (like I used to do). I like to preach moderation and balance with everything in life.
Paleo Coconut Ginger Lime Mocktail
This mocktail combines 4 simple ingredients to make a light and refreshing combo. To assemble, you need to do is add the ingredients to a blender, line the rim of your glass with some salt (makes for a pretty presentation), fill glasses with ice, and enjoy! The recipe does separate some as time goes on, but all you have to do is mix it up and reincorporate again.
It has doesn’t have any weird added sugars or sweeteners, making is paleo, vegan, and Whole30 friendly. And even has some healthy fats from coconut milk.

Hi Noemi! The recipe is linked above, but if you missed it, here is the link – http://www.puretasterecipes.com/recipe/coconut-ginger-lime-mocktail/ – hope you enjoy!
Never did find recipe. It just looked like a commercial to see a cookbook. Doesn’t belong on this site.
Hi Linda! I’m so sorry, the recipe is linked above and ca be found here – https://www.puretasterecipes.com/recipe/coconut-ginger-lime-mocktail/
I worked with this company last year and unfortunately it looks like they changed their site around and there is no way to contact them. It does take a second for the site to load, but it does show you the recipe. It looks bad on my end and is my fault. I’m sorry for the inconvenience.
