Avocado lovers rejoice with this spicy pineapple jicama guacamole. A summertime twist on your favorite dip!
It is hard to meet a person that doesn’t like avocados. Seems like everywhere you look, there they are. Whether it be on toast, in tacos or on burgers, and even in smoothies.
True story – my boyfriend actually didn’t like avocados when we first started dating (among many other things). I don’t think he was exposed to them too much growing up so it’s not really his fault. He is really a texture type of person when it comes to food and eating. I personally don’t understand these texture disliking people. It is really hard for me to find a food I don’t like and texture has never really bothered me. Fortunately he has come a long way since we started dating 4 years ago. His whole palate has completely expanded.
If you have never tried jicama, I highly recommend it. It is a root veggie with a slightly sweet taste. The texture is kind of like an apple – crispy and refreshing. It adds a really nice contrast to the creamy avocado and sweet pineapple.
I tested this guac on some friends this weekend and everyone really liked it! It’s super helpful to have some other people trying and giving feedback to my recipes besides just myself and Michael. The more opinions the better I say. I also tested out a shrimp recipe on them, which will be coming to the blog soon!
I have been just dipping veggies into this pineapple jicama guac, but it goes so well with eggs, protein, tacos, burgers, and obviously chips. But those are off limits for me right now #whole30problems
