You know when you see all these pictures on social media with people looking all cute in their boots, sweaters, and scarves with their pumpkin spice lattes in hand? But you realize you live in the south and are still wearing jeans (or even shorts) and a tee and can’t imagine drinking something hot? Well this dairy free pumpkin pie milkshake is for you!
Truth be told, it is actually feels like fall here (at least for a few days here and there). Like pumpkin soup and blankets kind of weather, which is so nice. I love the warm weather and all, but with it cooling down, it just feels so dang nice.
Honestly, I could drink a milkshake anytime of the year, whether it be the summer or the dead of winter. I can totally imagine sipping on this pumpkin pie milkshake sitting in front of the fire with some sweatpants and slippers on – sounds like my kind of night!
Although, to be fair, winter here is not like winter in most places so that scenario is a little from the norm.
This pumpkin pie milkshake milkshake makes the perfect easy dessert. Whether you just want a creamy milkshake or you have no idea how to bake a pumpkin pie (aka me!), this will satisfy your craving for one! For a little extra oomph, top it with some whipped cream, granola, cinnamon, or even graham crackers.
Dairy Free Pumpkin Pie Milkshake
Milkshakes seem like the kind of thing you only get when you are out to eat, but they are actually pretty easy to make at home. All you need is a blender and a few basic ingredients. I kept this one dairy free and used a coconut milk based ice cream (NadaMoo! is my favorite), but you can use any kind you like.
Here is what you need:
- ice cream (dairy or non dairy)
- canned pumpkin
- lite coconut milk
- pumpkin pie spice
- vanilla extract
While I love a dairy filled milkshake at times, sometimes they don’t agree with me, so I wanted to keep this one a littler healthier. Not that there is anything wrong with dairy, but I really enjoy the flavor of coconut milk.
The coconut milk ice cream is lower in sugar than your typical ice cream and since coconut is naturally sweet, I didn’t find the need to add any additional sweeteners. I think the coconut milk, pumpkin, and vanilla combo are sweet enough. If you want something a little sweeter, you could definitely add some maple syrup, honey, or a date.
How to Make a Homemade Milkshake
It really can’t be easier than this – simply place all the ingredients into a high powered blender (I love my Vitamix) and blend it up until smooth!
Depending on the consistency you like, you can either add more liquid for a thinner consistency or less liquid for a thicker consistency. I personally like a thicker consistency, so there isn’t that much liquid in this pumpkin milkshake.
This recipe does make two small milkshakes or one large. I find the smaller serving satisfies my sweet tooth and I don’t need too much. But, if you have a crowd of people or want two large milkshakes, you can easily double or triple the recipe without any problems.
Additions to Your Pumpkin Pie Milkshake:
Homemade milkshakes are the best because you can add whatever you like to them! Here are a few things that would be great additions to this recipe:
- add some protein – vanilla powder powder or collagen would be good additions to add some protein to a healthy dessert
- make it boozy – all for the addition of some bourbon in this!
- nuts – pecans or walnuts would be delicious and add some nuttiness
- graham crackers or granola – would add a crust like flavor to the mix!
