This Pumpkin Pie Milkshake only has 6 ingredients and satisfies your craving for pumpkin pie, without all the baking! It’s vegan and dairy free too!
You know when you see all these pictures on social media with people looking all cute in their boots, sweaters, and scarves with their pumpkin spice lattes in hand? But you realize you live in the south and are still wearing jeans (or even shorts) and a tee and can’t imagine drinking something hot? Well this dairy free pumpkin pie milkshake is for you!
Truth be told, it is actually feels like fall here. Like pumpkin soup and blankets kind of weather, which is not the norm. It is supposed to warm up this weekend (finally!!) though. Honestly, I can probably drink a milkshake anytime of the year, whether it be the summer or dead or winter. I can totally imagine sipping on this pumpkin pie milkshake sitting in front of the fire with some sweats and slippers on – sounds like my kind of night! Although, to be fair, winter here is not like winter in most places so that scenario is a little from the norm.
Dairy Free Pumpkin Pie Milkshake
Milkshakes seem like the kind of thing you only get when you are out to eat, but they are actually pretty easy to make. All you need is a blender and a few basic ingredients. I kept this one dairy free and used a coconut milk based ice cream (NadaMoo! is my favorite), but you can use any kind you like. Here is what you need:
- ice cream (dairy or non)
- canned pumpkin
- lite coconut milk
- pumpkin pie spice
- vanilla extract
While I love a dairy filled milkshake at times, sometimes they don’t agree with me, so I wanted to keep this one a littler healthier. Not that there is anything wrong with dairy, but I really enjoy the flavor of coconut milk. The coconut milk ice cream is lower in sugar that most and I didn’t add any additional sweeteners. I think the coconut milk, pumpkin, and vanilla combo are sweet enough. You could definitely add some maple syrup or a date if you want it a little sweeter.
How to Make a Homemade Milkshake
It really can’t be easier than this – simply place all the ingredients into a high powered blender (I love my Vitamix) and blend it up until smooth! Depending on the consistency you like, you can either add more liquid for a thinner consistency or less liquid for a thicker consistency. I personally like a thicker consistency, so there isn’t that much liquid in this milkshake.
This pumpkin pie milkshake milkshake make the perfect easy weeknight dessert. Whether you just want a creamy milkshake or you have no idea how to bake a pumpkin pie (aka me!), this will satisfy your craving for one! For a little extra oomph, top it with some whipped cream, granola, cinnamon, or even graham crackers.
