Sometimes you just need a piece of cake. Am I right or am I right?! The problem with cake is, unless you grab a piece from a local bakery, you have to bake a whole cake. And then you have a whole cake sitting in your house just waiting for you to eat it. It doesn’t help that Michael’s sweet tooth is pretty much nonexistent so it’s usually me eating the desserts in the house.

Luckily don’t have huge sweet tooth either. But when it comes, I usually honor it or it just won’t leave me alone. And that is where this mug cake comes in! It makes the best healthy dessert so I can honor my craving. It’s single serve so you can make it for yourself and not have to worry about leftovers in the house. And it’s also made from good for you ingredients to keep you on track in your health and wellness goals.
This healthy chocolate protein mug cake is exactly what the name says. First of all, I hid a veggie in there ☺️ I mean what else do you expect?! The sweet potatoes makes it dense and fudgy and add a nice sweetness without having to add any extra sweetener. It has some healthy fats from tahini and an egg and packs some protein from chocolate protein powder. Plus antioxidants from the cacao powder. And it takes less than 2 minutes to make! All you have to do is mix everything up and microwave. You know I am not a baker so this is my kind of dessert. To keep it vegetarian, feel free to sub your favorite veggie protein powder. The chocolate chips are optional, but I recommend as they get warm and melty. I topped mine with shredded coconut, cinnamon, and flaked sea salt (sweet and salty are the bomb), but feel free to to top with whatever you want.

Healthy Chocolate Protein Mug Cake
ingredients
- 1/3 cup mashed sweet potato (70 grams)
- 1 large egg
- 1 tablespoon tahini
- 1 scoop chocolate protein powder
- 1 teaspoon cacao powder
- 1-2 teaspoons chocolate chips (optional)
- optional toppings: shredded coconut, flaked sea salt, cinnamon...
instructions
- In a small microwavable safe bowl or mug, add mashed sweet potato and egg and mix until thoroughly combined, making sure no clumps remain. Add tahini and stir to combine. Add in protein powder and cacao powder and stir until everything is incorporated. Sprinkle with a few chocolate chips if using.
- Microwave for 1:45 until cooked through and chocolate chips are slightly melted. Sprinkle with optional topping and enjoy!

I switched mine up just a bit according to what I had.. I used 1/3 cup pumpkin puree and 1 tbsp PB. So so good and satisfied my sweet tooth!
