Happy birthday to me!! Well it’s not my official birthday yet, but it is on Saturday! So I figured I would celebrate with ice cream!! PS – does anyone remember that song? It came out when I was in high school!! Man, that makes me feel old. And I definitely had to google the lyrics. I should have known it’s ‘yo birthday’ and not ‘your birthday’. What was I even thinking.
I never get too crazy with my birthday celebrations. It just feels like another day really, but with some extra special love and presents. We don’t have too much planned. I’ll go to CrossFit in the morning and get a good sweat in (I think we are doing this WOD again that I programmed last year!), might hit up this garage sale at the convention center downtown, and then Michael and I are gonna go to Uchiko for dinner. That is the thing I am most excited for!! I have been wanting to go since we moved here.
On Sunday will we will probably go to the farmer’s market to grab some local goodies. Then we might go to Rainey Street for a little Sunday funday action. I am still a little undecided on that part. I just don’t know if I want to drink or not, but Rainey Street is always so fun. And there is a potential to get Via 313 if we are there š
Now that I type all of that out, it looks like I have a lot planned haha!
Since I don’t have an ice cream maker and I like to keep it healthy around here, I made ice cream with only 3 healthy ingredients! Frozen banana, avocado, and mint. Boom! That is it. I used my Vitamix, which works perfectly. It seriously makes the best consistency and can’t be beat! If you don’t have one, a food processor or another high powered blender will work as well.
The combination of avocados and bananas makes this mint ice cream loaded with potassium (avocados have even more than a banana!). Avocados are also packed with fiber, antioxidants, and heart healthy fats. This is the kind of ice cream you can enjoy all the time and not just once in awhile, while making you feel great inside and out. I’m all about that!

3 Ingredient Mint Ice Cream (No Churn!)
ingredients
- 1 large avocado
- 2 frozen bananas*
- 1/4 cup fresh mint
instructions
- Add ingredients in the order listed to a Vitamix or high powered blender or food processor. Processor until smooth and ingredients are well combined, about 1-2 minutes.
- Add toppings or eat as it. Enjoy!

OK I’m back (10 minutes later). Sooo I think I need a more powerful blender and frozen bananas that aren’t so brown. I ended up with a brownish, green mush with a few banana chunks left. Oh and I had to add some almond milk because it wouldn’t blend.
Fail. Atleast it still tasted good! I’ll try it with my mom’s Vitamix next time š

Oh dang!! I’m sorry it didn’t work out for you! I would say a high powered blender is a must or else you would need some kind of liquid in there. I also freeze my bananas when they look perfect for eating (no brown and all yellow). I hear they have less sugars that way too. I hope you try it again and it works out for you!!
