Hi there! It’s been two weeks since I did one of these posts, so lets get right into it. This is my eats from Monday, pretty much the first day back from our little trip back East. It felt so good to be back in the kitchen and making the things I usually eat. We went grocery shopping on Sunday and our fridge is so jam packed with healthy stuff, maybe the most it has ever been, and I’m loving it. Breakfast started out with a Greek yogurt bowl topped with cherries, chia seeds, cocoa coconut almond butter (the bomb), and cacao nibs. It was awesome. I freaking love cherry season.
Lunch was kind of like a breakfast salad. Fried egg and egg whites, tomatoes, carrots, black beans, sweet potato cubes, crunchy chickpeas, and kimchi all over a few handfuls of spinach. I squeezed some lemon on there for a dressing, along with the egg yolk and hot sauce.
Pre-CrossFit snack was some frozen bananas and the cocoa almond butter again. So typical of me. I haven’t been to CrossFit in 2 weeks with traveling and it felt good to get back in there and lift some weights. I PR’d on my back squat so it was a good day.
The boyfriend made dinner while I was working out so it was pretty much ready when I got home. We had Tuna steaks, cucumber noodles, steamed broccoli, and avocado. I topped mine with a quick tahini sauce and Michael had some white rice with his for some extra carbs. My favorite brand of tahini is Soom – if you are looking to try it, use this link to save 10%.
My after dinner snack was quite strange, but actually freaking delicious. This really shows how weird I am. I took some cubed cantaloupe and these crunchy chickpeas we found at Costco and pretty much ate it like cereal with almond coconut milk and cinnamon. I don’t know the last time I had a bowl of cereal was (maybe like 2-3 years) and this tasted on point. These chickpeas are my new favorite snack. The only ingredients are chickpeas, sunflower oil, and salt. I am literally eating them with everything lately.
