Today’s eats consisted of a lot of leftovers, but I’m not complaining. Cooking up a lot of food at once makes for easy weeknight meals. Sometimes you are just tired after work and don’t feel like doing much, AKA today.
The weather has been really nice here in Austin, but we haven’t turned on our AC yet. I know our neighbors have because I can hear it running, but I don’t think it is that hot out yet. It can be a little warmer in our house though, probably like 75-80 depending on the time of the day. I grew up without air conditioning so it doesn’t bother me at all really. I woke up not wanting anything warm so I had some Greek yogurt and fresh strawberries all topped with chia seeds, sunflower seed butter, and local honey. Hit the spot.
A little later on I snacked on a protein sweet potato muffin. These things are so good. This time I made them with blackberries which turned out nice, except all the berries sink to the bottom of the muffin when you bake them.
Lunch was a big omelet stuffed with spinach, zucchini, and tomatoes. I had a little side of leftover quinoa mixed with some roasted beets. Breakfast for lunch is the best.
Snack time consisted of a rice cake topped with sunflower seed butter and some cinnamon.
Dinner was an easy version of a tostada. I heated up some leftover corn tortillas until they were crispy, topped it with an avocado and Greek yogurt sauce, then leftover crockpot shredded chicken, lettuce, tomato, black beans, and some salsa. They actually turned out pretty good and I might make something like it the blog. Funny side story – the bf wanted quesadillas, but I didn’t want that so he had to make them for himself. He ended up shredding Parmesan cheese instead of the cheddar. He said it still tasted good, but it wasn’t as gooey and melty as a quesadilla should be.
Intramural dodgeball started back up so after the game I snacked on some cottage cheese sprinkled with some PB2 powder. And I had a homemade caramel that we got in the mail today from my mom. Moms are the best.
