What I Ate Wednesday

Rise and shine! I stayed up wayyy past my bed time last night and am feeling it today. We went to the Hozier concert, so it was worth it. He is amazing live. It sounds pretty much like you are listening on the radio, but better. I find it funny how just staying up 2 hours later than normal changes everything. I feel like I used to be able to do that all the time and be fine. Not anymore, I’m getting old.

Breakfast was some Greek yogurt, chia seeds, flax seeds, and fresh strawberries all topped with local honey and cinnamon. I read from another blogger that your body can’t digest the whole flax seed and you should buy them ground. I need to look into that as I usually eat them whole.

I went for a 3 mile run during the day and had this Hummusapien muffin topped with almond butter as a pre-run snack. I am still no where near my 50 miles that I wanted to run this month.

After my run a made up a quick lunch of some canned tuna mixed with mustard and coconut aminos, then put it in some cabbage cups topped with avocado and hot sauce. I also had some sliced cucumber on the slide.

By dinner I was literally starving. I meant to have a snack in the afternoon, but got too caught up with work and then realized it was almost 5 and didn’t want to eat that close to dinner. I just winged it for dinner and made a casserole type thing with corn tortillas, black beans, tomatoes, kale, zucchini, and jalapenos. I topped it with some avocado and Greek yogurt sauce. I was so hungry that I had another piece of that and a half of a turkey burger since the bf had made some for himself. The casserole didn’t hold together that well and looks like a hot mess.

At the concert I had a Titos and club soda, but since I don’t have a picture of that, here is the performance. The lighting effects at the concert were pretty awesome as well.

When we got home I had some Greek yogurt topped with almond butter and some love bean fudge. Not the most photogenic yogurt bowl. Then passed out like a baby.

    Breakfast looked amazing, I never knew that about the flax seed either but I’ve only ever bought ground, just cause it seems to be all I can find! x

      I have been having that breakfast more often as it has been getting hot in Texas! I will need to look up the information about the flax seeds and report back. I love them in the whole seed form!
