What I Ate Wednesday

Two blog posts in one week. Crazy. So usually I publish these posts on Wednesdays, hence the name, and post what I ate on Tuesday (the day before). Well I was just thinking that I am just going to start to do random days during the week. I mean what if we celebrate taco Tuesday every Tuesday, then you guys will think all I eat is tacos. Not that there isn’t anything wrong with that, it would actually be pretty amazing, but for the sake of these posts, I will change it up. Then you can even see what I eat on weekends and what not when I am out and about doing weekend things.

Pre-CrossFit I had a few frozen banana pieces since the WOD had a lot of running and looked to be longer.

Breakfast was eggs, greens, leftover broccoli, tomato, and sweet potato. I just started to ride my bike to CrossFit in the mornings, so after riding there, doing the WOD, and then riding back, I needed something to refuel my muscles.

A little before lunch I had some kombucha gummies since I headed down the pool at lunch and was going to eat after I got back. I am seriously obsessed with these. I started brewing my own kombucha and have so much of it, so these are awesome.

Lunch was a bomb ass salad consisting of spinach, sprouts, tuna, beets, cucumber, red grapes, almonds, and carrot sticks with a tahini and mustard dressing. More mustard on the side for dipping the carrots. My favorite brand of tahini is Soom – if you are looking to try it, use this link to save 10%.

Later on I had a snack of a fresh apricot. So much better than the dried kind. Check out my post from earlier this week where I made a delicious yogurt bowl with them.

The bf wanted to go to the pool after work, so back to the pool. It’s so nice that it is finally open. Most of the pools didn’t open till Monday here in Austin. I find it really weird since it gets hot here in like the beginning of April. I made us a snack of crunchy chickpeas (also my new favorite snack), toasted coconut flakes, and cherries.

Dinner was tacos because it was Tuesday!! Mahi mahi tacos in cabbage cups with a quick mango salsa and avocado, paired with some cilantro rice and more salsa. So, so good.

I then had some more kombucha gummies before bed. See picture above haha.
