First episode of ‘What I Ate Wednesday’! This will probably be a post I do every Wednesday on what I ate throughout the day. Most people might not be interested, but I always find it interesting what other people are eating who are trying to live a healthy and active lifestyle. It helps me stay on track of my eating habits and gives me some inspiration as well. Luckily I work from home on Wednesdays so I don’t have to prep all my food to eat at the office.
Breakfast was around 8am and was sautéed spinach, an egg and some egg whites, avocado, and sliced tomato. I eat eggs almost every morning, and I don’t ever really get tired of them. And obviously hot sauce, because I put it on almost everything. I also had this oatmeal fritter that I am testing out for the blog. Needs a little more work.
I went to CrossFit at noon so my pre-workout snack was some frozen banana and a protein fudge ball. The WOD was a running WOD, so I had the banana to give me a good boost of energy (or that’s what I told myself haha).
The workout was good…5 rounds of an 800m run. Each round was capped at 7 minutes, so you have 7 minutes to run 800m, if you finished before the 7 minutes that was your rest time. Your score was your slowest round. My slowest round was 3:01 and I think the fastest was maybe 2:50 or so, not sure. I finally got to eat lunch around 2:45. I made a wrap with leftover tuna steak from dinner the night before, a tahini sauce, cucumber, carrots, and some mustard inside a collard green. These are probably going to be my new favorite things to wrap stuff up in. So good. And I had some raw cauliflower with hummus and mustard on the side. Around 4:30 I made a protein shake. It had homemade cashew milk, spinach, chocolate protein, frozen berries, and avocado. I knew it wasn’t going to be a pretty color, but it was tasty so that is all that matters.
I usually drink my smoothies out of my Vitamix. One less dish to wash in the end.
Dinner was eaten in about 5 minutes because I got caught up trying to figure stuff out on here and then realized it was 6:30 and had to be at a dodgeball playoff game at 7. We won the first round and then lost in the semi-finals 🙁 but it was super fun and we rocked the first set of games. Thankfully the bf had roasted some butternut squash and I had put some chicken in the crockpot earlier in the day. I added some steamed spinach for some greens. And hot sauce.
After dodgeball I had a snack of some Greek yogurt with cinnamon, chocolate almond butter, and another oatmeal fritter. I figure the faster I eat them, the faster I can test the recipe again. Makes perfect sense.
Oh and I had already ate some an then realized I had to take a picture. I guess I need to get used to this whole thing. Roughly 1400 calories – 141g protein, 110g carbs, and 45 grams fat – and almost a gallon of water. That’s it for my eats.

Thanks dad! That pic was from my Instagram, which I’m sure you don’t know what that is haha. We don’t eat cheese much, but they have delicious queso there!! You will have to go when you visit 🙂
