What I Ate Wednesday

The day started out pretty strange, so my eats were a little off in the morning. I woke up in the middle of the night with an upset stomach and ended up getting a little sick in the middle of the night. I’m not sure what it was from, but my only guess is the Greek yogurt I had before bed. The expiration date isn’t until the end of next week, but the bf and I had the same thing for dinner so I don’t know what else it could of been. I would really hate to waste the whole container (I hate wasting food) if it wasn’t that. So the boyfriend said he is going to try some to see if it makes him feel crappy, what a guy.

So I woke up and didn’t have much of an appetite and felt pretty weak, but eventually decided on some oatmeal since I figured it would be easy to digest. I added a little egg whites for extra protein and then topped it with cinnamon, chia seeds, frozen berries, and this new honey sunflower seed butter I found at Costco. Alexis over at Hummusapien turned me on to this and it is so good! Especially if it is chilly out in the morning, which it has been here in Austin.

Around 12:30 I was starting to feel pretty normal so I had some leftovers of the Raw Beet Salad and Pear Ginger Vinaigrette that I posted yesterday. Check it out. I also added some scrabbled eggs.

Two hours later I was hungry again so I had more leftover salad and added some canned tuna with some mustard and hot sauce. Pre-dinner snack was two pickles. I ate one and then wanted another. They are the best. Ignore my chewed up cuticles, I have a slight problem with that.

For dinner we celebrated Taco Tuesday! Ground chicken, corn tortillas, lettuce wraps, tomatoes, guacamole, and shredded cheese. Can’t go wrong with that.

After dinner I wanted a treat like protein shake, so I had chocolate whey, frozen berries, sunbutter, and some ice. It turned out really thick, which was exactly what I was going for.
