Recapping a day of eats. Thanks to the other bloggers who started the What I Ate Wednesday linkup!

I haven’t done one of this posts in a minute. Is it just me, or do you find it so interesting to peak into people’s lives and see what they eat during a day. Maybe it is the foodie in me, but I know I am not the only one. This week’s recap is from last Wednesday, my second to last day of Whole30! I did have two snacks since that day I was a lot hungrier than normal, but all foods are Whole30 approved!

That day I had the morning off and didn’t have to coach CrossFit until 6:30pm. Lucky for me I was able to make all my food at home. I woke up around 7, laid in bed looking through social media some, checking email and what not. Around 8-8:30 I finally decided to make some food. Breakfast consisted of 2 fried eggs, 2 white potatoes fried up, sliced cucumber and red pepper, and 1/4 of a smashed avocado. I also ate some cherries while I was cooking up the eggs and potatoes.

What I Ate Wednesday

The morning consisted of a lot of blog work. Around 12 I made lunch. A big salad with spinach, tuna fish mixed with curry sauce and coconut aminos, tomato, cucumber, red pepper, red onion, and almonds.

What I Ate Wednesday

I was working out at 5:30pm, so around 4:45 I decided to make a little snack. I was a little hungry and knew I had to coach after I worked out so I wouldn’t be eating until later in the night. My snack consisted of some frozen banana pieces, blueberries, and a little almond butter.

What I Ate Wednesday

After working out and coaching, I finally got home around 7:45. Dinner was around 8 and consisted of leftover roasted chicken, sautéed asparagus, sliced tomato and cucumber, and some avocado. The bf has been doing a meal plan to gain some weight and has been cooking up a bunch of protein in the beginning of the week. Having that makes dinner so much easier during the week when I don’t get home till later.

I was still starving after dinner. Around 9:30 I had a snack of sweet potatoes, pineapple, almond butter, and cinnamon. I was still hungry when I went to bed around 10, but knew I could hold out until the next day.

Clearly really digging the nut butters right now. And fruit. So much fruit has be going on lately.

    That after dinner snack has me drooling! So easy but oh.my.gosh such a great idea! Actually all the food you ate is totally up my ally. Mmmmmm!

      I love pretty much any fruit and sweet potatoes with nut butter! And yeah, eating Whole30 isn’t too bad is it?! Haha
