Happy hump day! Midway through the week woot woot! I am heading home tomorrow to celebrate my sister’s graduation from college! Can’t wait to see my family and some friends, and of course celebrate!
I haven’t done one of these posts in awhile, but I always find it interesting to see what other people eat. It gives me ideas and inspiration to change up my daily eats. This is from last Thursday. I worked at Crush in the morning and then coached at CrossFit at night, which is a typical week day for me. I didn’t have to be at Crush till 8:30am though which was AWESOME. Usually it is 5:30am. Okay, here we go…
Woke up around 6:30am. Posted a picture on Insta of my homemade chips and then laid in bed for a bit. Got up around 7 and made the bf breakfast of oatmeal and a bunch of other stuff (protein, egg whites, chia seeds…). Ate a bite or two of that. Around 7:45 I finally made myself breakfast. It consisted of an acai bowl with peanut butter that I am testing out for the blog.
I snacked around 12 to hold me over until I got home for lunch. Carrots and cucumbers it is.
Once I got home around 1:45 I was starving. I made some breakfast tacos with sautéed cauliflower and zucchini, scrambled eggs, cherry tomatoes, olives, a homemade basil sauce, and sriracha all in some cabbage cups. While I was making that I snacked on some of the raw veggies I was cutting up with the basil sauce.
I chilled for awhile at home and worked on the blog some. Headed to CrossFit around 4 to coach at 4:30 and 5:30pm. Then I stayed for the 6:30 class to workout. Great workout of running, push jerks, pull-ups, and hang squat cleans. Find it here. Finally got home around 7:45 and was starving! Michael did the workout at 6:30 too, so we got home the same time. Dinner consisted of a huge ass salad of mixed greens, cucumbers, cherry tomatoes, cauliflower, leftover crockpot chicken, little cheese, and Indian spiced crunchy roasted peas. It was dressed with a homemade yogurt cilantro sauce and sriracha. I snacked on some chicken, veggies, and a bunch of the roasted peas while I made my salad. I haven’t been eating meat too much during the week, but Michael made some really good crockpot chicken earlier in the week which is great for quick meals.
While we ate dinner we roasted some potatoes. So for dessert I blended half a sweet potato, Greek yogurt, almond milk, almond butter, and cacao powder. It wasn’t as thick as I wanted it to be, but good nonetheless. Topped it with some frozen berries and a peanut butter chocolate oat cookie that is coming to the blog soon.
Day of eating done. Looks like I am digging sriracha for the moment.
