This is my mother-in-law’s sausage dip recipe that she has been making for as long as I have known my husband. She always makes it when a bunch of the family gets together and it’s always a hit.
Plus, it’s so easy to make and made with only 6 ingredients, yet full of flavor. I tweaked it ever so slightly to put my own spin on it.
First, I like using chicken sausage instead of pork to up the protein and lower at the fat a little. Both will work though. I also cut down on the cheese and added pickled jalapeños to balance the richness of the dish, which makes the perfect addition. And to finish it off, I added some fresh cilantro.
It’s a little spicy, savory, has some creaminess from the beans, and a little tang from the pickled jalapeños. Served with some crunchy tortilla chips, it’s make the perfect appetizer or a game day dish for football watching.

Ingredients
- spicy ground sausage – I like using chicken sausage for a little more protein, any kind of sausage will work.
- refried beans
- canned chopped green chiles
- monterey jack cheese
- sweet and spicy pickled jalapeños
- cilantro
- salt and pepper
How to make sausage dip
- Preheat the oven to 350 degrees Fahrenheit.
- Brown your sausage. Heat a large skillet over medium heat and let it get hot. Add your sausage, some salt and pepper, and break it up. Sauté for 6-7 minutes until browned. Drain excess grease from the pan.
- Assemble dip. Spread refried beans in the bottom of a 7×11 baking dish, creating an even layer. Next add a layer of ground sausage. Top sausage with green chilis, spreading out evenly. Sprinkle with shredded cheese.
- Bake for 15-20 minutes until cheese and melted and warmed through.
- Top with pickled jalapeños and cilantro.
- Enjoy!

Make it ahead of time
My mother-law-in always makes this ahead of time and then just reheats it when she is ready to serve. To do so, you and either cook the sausage, assemble, and store in the fridge until ready to bake. Or you bake it according the to the directions. Then, once it cools completely, cover with a lid or Saran Wrap, and store in the fridge. When ready to enjoy, simply bake for 25-30 minutes (since it will be cold) until warmed through. Then finish it off with the jalapeños and cilantro.
How long is sausage dip good for in the fridge?
Let sausage dip cool completely. Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, place leftover dip in an oven-safe dish, cover with tin foil, and reheat for 25-30 minutes until warmed through. You can also reheat it in the microwave for 1-2 minutes until warmed through.
Can you freeze sausage dip?
This spicy sausage dip is perfect to freeze. Simply assemble and bake the recipe as written, leaving off the jalapeños and cilantro, and let cool completely. It should last up to 3 months in the freezer. Defrost in the fridge overnight and then heat up in the oven when ready to eat. Once hot, top with jalapeños and cilantro.
Substitutions
- ground sausage – you can mild or spicy and chicken or pork sausage. If you don’t like sausage, try ground beef, ground chicken, or ground turkey.
- refried beans – black or pinto refried beans will work.
- chopped green chiles – a can of Rotel diced tomatoes and green chilies will work instead.
- Monterey jack cheese – try cheddar cheese or pepper jack.
- pickled jalapeños – feel free to leave this off if you don’t like them.
