Does it get any more nostalgic than a grilled cheese sandwich? They were a favorite of mine growing up. My love for buffalo chicken runs deep, so I figured, let’s combine the two into an epic buffalo chicken grilled cheese sandwich!

These buffalo chicken grilled cheeses are packed with classic buffalo chicken flavor mixed with shredded cheese, stuffed into two slices of bread, and lightly pan-fried until the bread is golden brown and crispy.

Is grilled cheese healthy?

Grilled cheese sandwiches usually consist of carbs, fat, and a little bit of protein. They are usually heavy on fat and calories and do not make much of a balanced meal. Of course, they can be enjoyed in moderation, but something to think about if you have specific goals.

But this homemade buffalo chicken grilled cheese is lightened up and can make a healthy addition to one’s diet! We aren’t using a ton of cheese in this recipe to keep the fat down. We also added lots of chicken and greek yogurt for protein. Serve them with some veggies for a balanced meal.

  • cheddar cheese
  • sourdough bread

How to make buffalo chicken grilled cheese

Make your buffalo chicken mixture.

Add your shredded chicken, buffalo sauce, greek yogurt, garlic powder, dill, and some salt and pepper to a medium bowl and stir well to combine. Add in shredded cheese and mix again to combine.

Assemble your grilled cheese.

Spread a thin layer of butter on one side of each slice of bread. Save a little butter for cooking. Add about 1/2 of your shredded chicken mixture to the non-buttered side of one piece of bread. Add a second slice of bread over the mixture, making sure the buttered side is on the outside, pressing it down. Repeat with the remaining bread and chicken mixture.

Cook the grilled cheese.

Heat a griddle or large skillet and melt the butter. Place assembled grilled cheese on the griddle and cook for 4-5 minutes, then flip and cook for another 2-3 minutes, until both sides are slightly crispy and golden brown. I like putting a piece of parchment paper with a small pan on top of the grilled cheese while it cooks to help it get crispy.

Cut each grilled cheese in half and enjoy hot. Serve with sides or dips of choice.

What is the best cheese for grilled cheese?

For the best grilled cheese sandwich, you want a cheese that melts well. Cheddar, American, mozzarella, Gruyère, Havarti, Gouda, and Muenster are the more common options. You can also mix cheeses to have two or more kinds in a sandwich.

What is the best bread for grilled cheese?

Most kinds of bread will work for grilled cheese. Some good options consist of sourdough, whole grain, rye, rustic white, and sliced sandwich bread.

Can you make a grilled cheese in an air fryer?

Yes, you can make a grilled cheese sandwich in the air fryer. Make the sandwich according to the instructions and cook at 350 degrees for 6-8 minutes, flipping halfway through, until the cheese melts and the bread is golden brown.

How to reheat grilled cheese

  • Place leftover sandwich in a skillet on the stove over low-medium heat with a little butter or oil and let warm through, about 3-5 minutes, flipping halfway through. You can also place it in the air fryer, toaster oven, or oven at 350 degrees Fahrenheit and heat for 5-10 minutes. I don’t recommend using the microwave, as it will lose its crispness.

Substitutions and additions

  • shredded chicken – I like chicken breasts for this recipe, but chicken thighs will also work. You can also use a store-bought rotisserie chicken.
  • buffalo sauce – homemade or store-bought will work interchangeably for this recipe.
  • greek yogurt – full-fat, low-fat, or fat-free will work. Use dairy-free if needed. Mayonnaise, sour cream, or cream cheese will also work, but they will add more fat to the recipe.
  • spices – feel free to use more or fewer spices.
  • cheddar cheese – any kind of cheese will work. For this sandwich, try pepper jack, colby jack, monterey jack cheese, provolone, or even mozzarella cheese if you don’t have cheddar.
  • sourdough bread – use your favorite kind of bread!
  • butter – some people like to use mayo instead of butter, but I have never tried it.
