A spicy and protein-packed spin on a classic, this buffalo chicken grilled cheese makes an easy and delicious lunch or quick dinner. Ready in 20 minutes and packed with buffalo flavor.
3/4cupshredded cheddar cheese(2 ounces - I like to grate mine fresh)
4slicessourdough bread(about 7 ounces)
1tablespoonbutter
salt and pepper, to taste
for serving - blue cheese dressing, ranch, buffalo sauce…
Instructions
Make your buffalo chicken mixture. In a medium bowl, add your shredded chicken, buffalo sauce, greek yogurt, garlic powder, dill, and some salt and pepper. Stir well to combine. Add in shredded cheese and mix again to combine.
Assemble your grilled cheese. Spread a thin layer of butter on one side of each slice of bread. Save a little butter for cooking. Add about 1/2 of your shredded chicken mixture to the non-buttered side of one piece of bread. Add a second slice of bread over the mixture, making sure the buttered side is on the outside, pressing it down. Repeat with the remaining bread and chicken mixture.
Cook the grilled cheese. Heat a griddle or large skillet and melt the butter. Place assembled grilled cheese on the griddle and cook for 4-5 minutes, then flip and cook for another 2-3 minutes, until both sides are slightly crispy and golden brown. I like putting a piece of parchment paper with a small pan on top of the grilled cheese while it cooks to help it get crispy.
Enjoy! Cut each grilled cheese in half and enjoy hot.
