Who doesn’t love a good quesadilla?! A tortilla stuffed stuffed with meat and cheese and fried until crispy? Yes, please! These buffalo chicken quesadillas take your classic quesadilla and put a spicy spin on them.

If you have been following along for a while, you know I love a good buffalo chicken anything – hence these chicken tenderscasserole, and soup. I’m also a huge lover of Mexican food. So I figured why not combine them both?

These buffalo chicken quesadillas are packed with classic buffalo chicken flavor and shredded cheese, stuffed into a tortilla, and lightly pan-fried until crispy. Once done, we love serving them with some veggies, blue cheese dressing, and of course guacamole for dipping. Good Foods Chunky Guacamole is our favorite – it’s made from simple whole food ingredients, tastes amazing, and pairs perfectly with spice from quesadilla.

We love these buffalo chicken quesadillas for an easy weeknight meal or they would be perfect for game day. Plus, they are a meal everyone can get behind!

What is a quesadilla?

A quesadilla is a Mexican dish consisting of a large tortilla filled with cheese and sometimes meat, beans, veggies, or a combination and pan-fried until crispy and the cheese is melted. They are usually served with salsa, sour cream, or guacamole for dipping.

Are quesadillas healthy?

Quesadillas usually consist of carbs, fat, and sometimes protein. When getting them out at a restaurant, they can be heavy on fat and calories and not make much of a balanced meal. Of course, they can be enjoyed in moderation, but something to think about if you have specific goals.

But these homemade buffalo chicken quesadillas make a delicious healthy addition to one’s diet! We aren’t using a ton of cheese in this recipe to keep the fat down. We also added lots of chicken and greek yogurt for protein. Serve them with some veggies for a balanced meal.

Ingredients

  • shredded chicken
  • buffalo sauce – I love using homemade for the best flavor.
  • greek yogurt
  • garlic powder
  • dried dill
  • large tortillas – look or burrito size tortillas
  • cheddar cheese
  • butter
  • salt and pepper

How to make buffalo chicken quesadillas

  1. Make your buffalo chicken mixture. In a medium bowl, add your shredded chicken, buffalo sauce, greek yogurt, garlic powder, dill, and some salt and pepper. Stir well to combine.
  2. If your tortillas feel a little dry, you can heat them to help them be pliable. Add them to a hot pan or griddle and heat for 15-30 seconds per side.
  3. Make your quesadillas. Heat a griddle or skillet over medium heat and melt the butter. Add about 1/4 of your shredded cheese to half of your tortilla. Then, top with buffalo chicken mixture and sprinkle with about 1/4 more of your cheese. Fold the other half of the tortilla over the ingredients, pressing it down. Place it on the griddle and cook for 4 minutes, flip, and cook for another 2-3 minutes until both sides are slightly crispy and golden brown. I like putting a small pan over the quesadilla while it cooks to help it get crispy. Repeat with the remaining tortilla, chicken, and cheese.
  4. Enjoy! Cut each quesadilla into equal-sized triangles and serve with dips and sides of choice.

What to serve with quesadillas

Storage and reheating

  • fridge – let quesadillas cool completely. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • freezer – place in a large freezer bag (we love reusable silicone ones) and freeze for up to 3 months. Defrost in the fridge or on the countertop.
  • reheating – to reheat, place leftovers in a skillet on the stove over low-medium heat with a little butter or oil and let warm through. You can also place it in the microwave for 30-60 seconds, but it will lose a little bit of its crispiness.

Substitutions and additions

  • shredded chicken – I like chicken breasts for this recipe, but chicken thighs will also work. You can also use a store-bought rotisserie chicken.
  • buffalo sauce – homemade or store-bought will work interchangeably for this recipe.
  • greek yogurt – full-fat, low-fat, or fat-free will work. Use dairy-free if needed. Mayoainnse or sour cream will also work but they will add more fat to the recipe.
  • spices – feel free to use more or fewer spices.
  • large tortillas – large burrito-size tortillas work best for this recipe. Flour tortillas or grain-free tortillas will work. If you can’t find larger tortillas, you can use smaller corn tortillas and just make more quesadillas.
  • cheddar cheese – any kind of cheese will work. Try pepper jack, colby jack, monterey jack cheese, or even mozzarella cheese if you don’t have cheddar. Use dairy-free if needed.
  • butter – a little olive oil will also work.

Here are some additions you can add:

  • beans – black beans or pinto beans would be a great addition.
  • veggies – the more the merrier! Diced bell peppers, zucchini, or green onions would work well.
