Doing Things
Beginning of the month started off with Michael and I meeting up with one of my cousins for dinner. My 1 of 3 total cousins – yes I only have 3 cousins haha. I don’t think we had seen each other since like maybe early 2000s, so that was fun. He was in town so we met up for a quick bite. We got ramen and it was delicious and it was great to catch up with him.
We got to watch my friend compete in a local all girls CrossFit comp which was a lot of fun. She killed it and got second place overall! Then we celebrated that night and I drank a lot of vodka, which I haven’t done that in awhile, so that was fun haha.
Mid-month Michael and I celebrated our 3 year anniversary in Austin! Crazy to think we have been here 3 years already. We celebrated the exact same way we did the first night we got here. Walked down the street and got pizza and beer (well he had a beer) at Pinthouse Pizza.
I also got to host a class at Flywheel, which was a lot of fun. I didn’t teach the class, just had some friends and followers come ride with me. It was so fun to sweat it out with people you normally don’t. Then last week we went to a curry cook-off hosted by AFBA. We went last year and it was tasty so we had to go this year too. I love curry so it was fun to try a bunch from local chefs around the city.
We also tried out Snooze an A.M. Eatery at the beginning of the month. The pancakes were on point, but I was a little disappointed with my eggs benedict. I don’t know if I would go out of my way to go there again, but you never know.
What I am loving
Kellie’s Baking Co.!! This place has been right down the street from us the whole time and we just tried it out this month. The cookies are freakin awesome. They are still soft and doughy on the inside, but the outside edge is crunchy. I highly recommend if you are in Austin. They also make edible cookie dough and mini cheesecakes. Heck yes. Note – we did not get that lovely s’mores cookie creation, but it has been on my mind ever since 😉
Grilling season! We have been using our grill a decent amount the last month and I’m loving it. It makes dinner so much easier.
Last, but certainly not least is Verts! I tried it for the first time at the end of last month and am obsessed. Think Chipotle, but with Mediterranean food. I got an amazing bowl with beef and lamb, all the veggies, eggplant dip, tzatiki, and of course sweet potato fries. I could eat there everyday and be happy. They also have a nutrition calculator on their site so I know exactly what I am eating. Yay for places that are macro friendly!
Hope you guys are ready for May! I have something really exciting I’m doing next week and can’t wait to share with you guys.

I always love it when a blogger announces that they’re doing something really exciting. It’s fun to look forward to the unveiling. And girl you know how to ROCK those cookies and kale. I seriously love how balanced you are around eating; as someone who struggled with an ED I love coming to your site Kelly because you emanate a lot of freedom around food and working out. 🙂

Thank you Emily, that means so much to me. I have come a long way in trying to find a happy balance in food and fitness. It’s still a work in progress, but something that I want to emphasize that it is possible!
