What I Ate Wednesday

A few days late, but here are my eats from this past Wednesday. Better late than never I suppose. Michael and I went to South by Southwest on Wednesday night, so you will see my eats along with some drankss. Trying to keep it healthy, but also trying to have some fun!

Breakfast was some white rice, mushrooms, and beets fried in coconut oil, with a fried egg, some egg whites, and avocado, on top of baby spinach. I forgot how good left over rice is fried in coconut oil. Tastes so rich and buttery to me.

Pre CrossFit snack was a Apple Cinnamon Protein Fritter and some carrots.

Lunch was a big ole salad with spinach, canned wild salmon, tomatoes, zucchini, grapefruit, and some pickles. I made a quick dressing of dijon mustard and balsamic vinegar.

While I was getting ready for the concert I made a protein shake consisting of chocolate protein, almond butter, oats, almond milk, chia seeds, and hemp seeds. Good thing for tracking in My Fitness Pal because I honestly didn’t remember what was in this, but it was delicious. According to MFP, I also had another Apple Cinnamon Protein Fritter. I honestly don’t remember.

Since Michael hadn’t eaten since lunch and we left pretty much once he got home, he stopped and got a Cinnamon Roll Quest Bar once we were downtown which I had a bite of. I had a vodka soda at a bar while we waited for our friend to meet us.

The event had a setup for making s’mores, so I obviously couldn’t pass that up. I split this with Michael. I also had probably 3 or 4 (or 5) beers, which they were giving out for free. You can’t really say no to free s’mores and beer.

Once we got home we were pretty hungry, but didn’t have any protein already cooked. I asked Michael what we should have and he said french fries, so I made a mix of white and sweet potato fries. In hindsight it probably wasn’t a good idea to make them as we had to wait for them to cook for about 45 minutes. I stayed up way past my bedtime. I also snacked on some almond butter, carrots, and I think another protein fritter and probably other things I don’t remember. I was definitely feeling those drinks from earlier.

Overall our first SXSW experience was pretty awesome. We had VIP passes from Michael’s cousin, which made it even better. The bands were great, got some free stuff, and made it home in one piece. Successful night.
