Easy paleo and Whole30 Sausage Apple Hash made in one pan and in 20 mins! Perfect for a sweet & savory comforting breakfast and great for meal prep!
It officially feels like fall here! It may be raining and dreary outside, but it’s in the high 70s and it’s glorious. I’m not sure the last time we felt this temperature here in Austin. By the end of the summer everyone in Austin is always complaining how hot it is and they are ready for fall, but it usually takes us until October to get there. Looks like it has come a little earlier than expected and I’m hoping it stays like this for awhile!
With fall comes apples! Growing up in the northeast, it was synonymous with the cooler weather. I remember Michael and I went apple picking in the early stages of us dating even! I’ve yet to find an apple orchard here in Austin to go picking, but you can get them at the farmer’s market and the grocery store. So we are starting this fall strong with a super easy sausage apple hash perfect for those lazy fall mornings!
Sausage Apple Hash (Paleo/Whole30)
The ingredient list is pretty straight forward for this hash. It might look long, but they are all simple things you probably already have on hand or you can find it easily at the grocery store. It consists of apples, sausage, sweet potatoes, greens, and some warming spices to bring it all together. It comes together in about 20 minutes and in one pan! This is what you need:
- ground pork
- sweet potatoes
- salt and pepper
The make the hash, you start out by browning the pork, seasoning it with some of the spices. Once it is cooked through, remove it from the pan and set aside. Add the oil to the pan and cook the sweet potatoes and onion until softened (I like to add a little water to the pan and cover with a lid to speed up the process). Then we add in the apples, kale, and remaining seasonings and sauté for a couple minutes. Add back in the sausage until it warms and then top with the walnuts. I also topped mine with a fried egg and some avocado because everything is better with a fried egg!
This sweet and savory sausage apple hash makes the perfect fall breakfast! It you are an early riser, you can make it before heading to work. It also makes a hearty and satisfying paleo and Whole30 meal before heading out to a football game on the weekend. Or make it for meal prep for an easy option throughout the week – just keep it tightly sealed in a glass container in the fridge, it should keep for up to a week!
