A handful of simple ingredients make this Cilantro Lime Chicken Salad, an easy protein for meal prep that is paleo, dairy free, and Whole30 compliant.
Happy Spring! I honestly had no idea Monday was the first day of Spring until I saw people posting about it on Instagram. Pretty sad that is where I find things out these days, but the days all run together when you aren’t working a corporate 9-5 gig. While Spring isn’t too exciting here in Austin since the winter is mild, I am super pumped about daylight savings time. I know that happened 2 weeks ago, but you can already enjoy the longer days! Yay for more sunlight.
For a lot of people that have cold winters, spring means warmer weather foods. Bring on the fresh salads, smoothies, iced coffees, and fresh produce. I know I’m excited to start eating more salads and smoothie bowls.
I created this chicken salad on a whim a few weeks ago one day for lunch. We usually always have some kind of protein prepped and I usually just add it to a big salad with whatever veggies we have on hand. I wanted to spice up the shredded chicken and had some fresh lime and cilantro so figured why not. To bind it all together I used my favorite local non-dairy yogurt, Kokonut Yogurt
The coconut flavor is pretty mild and yogurt adds a nice creaminess without using mayo. The cilantro lime and coconut combo turned out so good I knew I had to share it with y’all. I mean you can’t really go wrong with cilantro lime in my opinion, unless you are one of those people that think cilantro tastes like soap haha.
This cilantro lime chicken salad goes great on top of some greens and your favorite veggies. I also have been making collard wraps with it or eating it with rice or quinoa. It saves great if you make a big batch over the weekend and keep it on hand for the week for lunches.

- 3.5 cups shredded chicken breast (400 grams)
- ½ cup coconut yogurt (100 grams) - I used Kokonut natural flavor
- 3 tablespoons lime juice (about 2 limes)
- ½ cup packed cilantro, chopped
- ½ teaspoon red pepper flakes
- salt and pepper, to taste
- Add all ingredients into a large bowl and mix well.
- Use as you please and enjoy!
