These Key Lime Pie Protein Overnight Oats take the classic flavors of key lime pie and turn it into a healthy, balanced, and protein packed breakfast.
I have a confession. I don’t think I have ever had key lime pie. I know I know, what a disgrace. First of all, I am plain old missing out. I mean it looks like a limey cheesecake with a graham cracker crust. And I love cheesecake. It was my favorite dessert growing up. Second, how can I make a healthy recipe if I have never had the original. Well I looked at quite a few recipes and it is a pretty simple dessert. Key limes, sugar, condensed milk/sour cream, cream, and graham cracker crust.
Easy peasy fix to be made healthy. Just sub the graham cracker for oats and condensed milk/sour cream for nondairy milk. The sweetness comes from the added vanilla protein powder. I don’t like things overly sweet so just the protein powder works just fine for me. If you prefer things sweeter, add in or top your oats with maple syrup or honey. If protein powder isn’t your thing then try greek yogurt.
The protein powder I used for this is fitppl. It is a new Austin based company creating plant based proteins that is gluten free, organic, non-GMO, and made with wholesome ingredients. I am talking no preservatives or additives. Not even stevia! Since it is all natural and has ingredients like oat grass and spirulina, the coloring of these oats is a little more green than key lime pie. If you use a different brand of vanilla flavored protein, yours will probably be more light green.
I also added in some chia seeds and avocado for some healthy fats to help you stay full for longer. The avocado is optional, but it adds a nice creamy texture. Chia seeds are a superfood powerhouse and help absorb the liquid to make these key lime pie protein overnight oats nice and thick. If you don’t want it as think, you can half the chia seeds or top with more milk in morning.

Key Lime Pie Protein Overnight Oats {Vegan}
ingredients
- 2/3 cups unsweetened cashew milk or milk of choice
- 2 tablespoons + 1 teaspoon fresh key lime juice (about 7 limes)
- 2 tablespoons avocado
- 1/4 teaspoon vanilla
- 1 serving vanilla protein powder (I like fitppl)
- 1/2 cup oats*
- 1 tablespoon chia seeds
- 1/4 teaspoon key lime zest
instructions
- In a high powered blender, blend together cashew milk, key lime juice, avocado, vanilla, and protein powder.
- Add to a jar and stir in oats, chia seeds, and lime zest.
- Cover and place in refrigerator for 4-6 hours or overnight. In the morning, top with desired toppings and eat at room temperature or warmed to your liking.
- Enjoy!
