Is it even summer if you don’t have grilled corn on the cob?! Kidding, but it is so dang good and corn was a staple in our house growing up.

I remember some nights my mom would come home late and she would just microwave two ears of corn for dinner for herself. Not going to lie, I think my parents might still do this, especially since there are no more kids in the house.

But grilled corn takes sweet summer corn to a whole new level by adding some char and smokiness to it. And the sweetness comes out even more.

To kick up this recipe, I topped it with a delicious Old Bay mayo for some spice. It balances out the corn perfectly and who doesn’t love a good sauce.

Grilled corn on the cob

This grilled corn recipe is super easy and so delicious! Grilling might be one of my favorite things about summer and this corn does it justice.

First, heat the grill to medium-high heat. If using a charcoal grill or if your grill takes a long time to heat up, make sure to do this in advance.

Next, prep the corn by removing the husk and excess silk. I prefer removing the husk when making grilled corn as it cooks faster and you get the best char marks on the kernels.

Then, spray/rub ears of corn with avocado oil, giving them a slight coating. I use this bottle all the time and it works perfectly for this recipe. You could also use your oil of choice or even butter or ghee.

Once hot, place corn directly on the grill. Cook for about 10-15 minutes, rotating every few minutes until corn is cooked and has some char marks.

Top with sauce and enjoy! You could also keep it super simple and just top it with butter if you prefer.

Old Bay mayo

I am I’m all about sauces – it’s the easiest way to add some flavor to foods. If you are from the east coast, especially the mid-Atlantic region, you are definitely familiar with Old Bay. It makes the perfect topping on the corn to balance out the sweetness and add some creaminess.

Old Bay mayo ingredients:

  • mayo – homemade or store-bought will work (I used Primal Kitchen)
  • lemon juice
  • Old Bay seasoning

Simply mix all the ingredients together in a small bowl and place it in the fridge until ready to use. The sauce might even be better than the corn, I wanted to put it on everything!

ingredients

Grilled Corn

  • 4 medium-large corn, husked (about 200 grams each)
  • avocado oil
  • optional toppings: more old bay, green onions, chopped parsley...

Old Bay Mayo

  • 2 tablespoons mayo
  • 1 tablespoon lemon juice
  • 3/4 teaspoon Old Bay seasoning

  • Heat grill to medium-high heat.
  • Prep the corn by removing the husk and excess silk.
  • Spray/rub ears of corn with avocado oil, giving them a slight coating. Once the grill is hot, place corn directly on the grill. Cook for about 10-15 minutes, rotating every few minutes until corn is cooked and has some char marks.
  • While the corn cooks, make the sauce. Mix together the mayo, lemon juice, and Old Bay in a small bowl and place in the fridge until ready to use.
  • Once the corn is done, drizzle with sauce and optional toppings if using.
