This easy vegan holiday salad with lemon mustard vinaigrette is healthy, comes together quickly, and fits in the perfect beautiful spread for holiday parties.
Usually I am all about a loaded salad. Give me all the veggies and a little greens and I am set. Add some kind of hummus or dip on the side, and I am in heaven. With it being the holidays and all, and usually you have a big meal coming, you don’t need to be filling up on salad. Not that I think most people would do that at this time of year, but the kind of salads I usually make are huge. #bombasssalad
So I created this simple salad for your holiday feasts. It only has a couple ingredients and can be made in about 10 minutes. The dressing is also very simple and you probably already have all the ingredients on hand. And it is festive. I mean it is red and green. If you don’t celebrate Christmas, you can still get down on this. It would be great for a New Years party as well.
This time of year is all about indulging, which is totally fine, but you still need to get in your veggies. That way when you go in for your second (or fifth) holiday cookie, you can still feel somewhat okay about some of the choices you made earlier. Life is all about balance. You can still eat healthy this holiday season and indulge some too. No one wants to look back wishing they would of had a piece of their grandma’s pie or holiday cookie from their neighbors.
Easy Vegan Holiday Salad with Lemon Mustard Vinaigrette
ingredients
Salad
- 4 cups spinach
- 4 cups baby kale
- 2 cups diced cucumber
- 1 large avocado, diced
- 1/2 cup pomegranate arils
- 1/4 cup hemp seeds
Dressing
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
- 1 heaping teaspoon dijon mustard
- pinch of red pepper flakes (optional)
- salt and pepper, to taste
instructions
- Make the dressing by whisking all the ingredients together. Set aside.
- Make the salad by mixing all ingredients together in a large bowl.
- Drizzle the salad with dressing and toss to combine.
- Enjoy!
