Every time I post my breakfast on my Instagram stories and have chicken sausage on my plate, I always get asked what brand I buy. And while there are a couple we like, they can get expensive if eating all the time, so I figured it was time to make my own. And these homemade maple chicken sausage patties were born.

They are made with just 6 simple ingredients, come together in 25 minutes, and are so easy to make. The result is a perfect balance – they have a savory flavor with a hint of sweetness from the maple syrup. Since I used chicken, they are lower in fat than typical pork sausage and packed with more protein.

I love making a batch at the beginning of the week and serving them alongside some greens, sautéed veggies, crispy breakfast potatoes or toast, and some eggs. Or if eggs aren’t your thing, have 3-4 sausages for a high-protein breakfast! You can easily double or triple the recipe too and freeze some for later!

What is breakfast sausage?

Breakfast sausage is seasoned ground meat, usually with a sweet and savory profile, that is eaten in the morning alongside other breakfast staples. It is usually made of pork, but can also be chicken or turkey, and comes as ground meat, in patties, or links. Serve it alongside eggs, toast, biscuits, pancakes, or in breakfast sandwiches, tacos, or burritos.

Is breakfast sausage healthy?

Breakfast sausages can be a healthy addition to any diet when made with the right ingredients. When making them at home, you have full control over the quality of the ingredients. There are no added nitrites or nitrates, fillers, binders, or artificial ingredients. They also aren’t loaded with sodium, and just a pinch of sea salt is used for the whole recipe.

Ingredients

  • ground chicken – I suggest using ground chicken and not chicken breast, as chicken breast is too lean.
  • maple syrup – for a touch of sweetness.
  • garlic powder
  • ground sage
  • onion powder
  • cumin
  • salt and black pepper
  • olive oil, for cooking

How to make chicken breakfast sausage

Make sausages.

Add ground chicken, spices, salt, and pepper to a medium-large bowl. Using your hands, mix to combine.

Form sausage patties.

Form mixture into 9 equal-sized patties, making sure to flatten them out and putting a little thumb-sized indent in the middle so they don’t puff up when you cook them. The mixture will be sticky; if needed, wet your hands with a little water when forming patties.

Cook.

Heat up a large skillet or cast iron over medium heat, add oil, and let it get hot. Add sausage patties in a single layer and cook for 3-5 minutes, flip, and cook for another 2-4 minutes until browned and cooked through. You may have to cook in two batches depending on how big your pan is.

What to serve with breakfast sausage

You can treat this recipe as an addition to breakfast and serve it with other classic sides. Or if you are egg-free, use these patties as your main source of protein. Here are some ideas:

  • at breakfast with eggs, toast or potatoes, and veggies
  • in a breakfast salad
  • in breakfast sandwiches, burritos, tacos
  • alongside pancakes or waffles

Storage and reheating

  • fridge – store leftovers in an airtight container for up to 4-5 days in the refrigerator.
  • freezer – once cooked patties cool, then freeze in a large container or in individual servings. They should last up to 3 months in the freezer. Cook directly from frozen on the stove (no need to thaw!).
  • reheating – to heat them up, you can lightly pan-fry in a little oil (be careful not to overcook and dry them out) or pop them in the air fryer or microwave for a minute.

Substitutions and additions

  • ground chicken – I suggest using ground chicken and not ground chicken breasts, as chicken breast is too lean and they will come out dry. You can also use ground turkey or ground pork instead of chicken, with pork giving you that classic breakfast sausage flavor.
  • maple syrup – add more if you want them a little sweeter. Fennel seeds and thyme would be good additions.
  • spices – swap out the spices to your liking to change the flavor.
  • olive oil – any neutral oil will work for cooking.
