Today was a pretty good day of eating. I think I am going to start increasing my food intake a little more because I am starting to feel more hungry than usual. I also want to get in more good workouts before summer is officially here, so some more fuel will help me push through those.
Breakfast started with some chocolate peanut butter protein pancakes. They were ehh. Def not fluffy, which is key in a pancake. We went to whole foods the other day and they were giving out samples of these gluten free pancakes…hot damn they were so good. Maybe it was because I haven’t had them in awhile, but I wanted to go back for seconds and thirds. That’s obviously frowned upon so I didn’t, but ugh they were good. I actually ate my pancakes and then realized I didn’t take a picture so this is Michael’s last huge pancake. I think he was getting impatient so he just told me to make a huge one. Boy is that an ugly picture. I topped mine with some maple syrup and almond butter.
Lunch was a salad like most days. Spinach, collard greens, cucumber, peas, artichoke hearts, cauliflower, tuna steak from dinner last night, and then topped with flax seeds. For the dressing I used spicy mayo, hot sauce, and some lime juice.
Pre CrossFit was a rice cake topped with almond butter, blueberries, and some cinnamon. I wish I would have eaten more before cause that workout was pretty tough. I am going to change it a bit and then post it on the blog.
After CrossFit I met the bf at his work and we headed right to Sprouts to get some groceries they were having on sale. By the time we got home I was starving. Pre dinner snack was some carrots and mustard. Dinner was turkey, kale, and parmesan cheese meatballs (coming to the blog soon!)…they are really tasty. We made some cauliflower mash and I had some grape tomatoes on the side. Everything sprinkled with hot sauce. Feel like I need some more green in there, but at least the meatballs have kale in them.
Dessert was a smoothie made with banana, avocado, almond milk, cocao powder, and cocoa coconut almond butter. The banana was a little overpowering, but it was still delicious.
