Just three ingredients make this Strawberry Cashew Chia Pudding, an easy and nutritious breakfast, snack, or dessert that is paleo, gluten-free, and Whole30 approved!
Hooray! Totally is officially the last day of my Whole30! I figured I should go out with a bang. Chocolate cupcakes with peanut butter and Oreos!! Just kidding. None of that is Whole30 haha. Since you can’t have desserts or sweets on the Whole30, I decided to make a strawberry cashew chia pudding. I mean this is “dessert” on the Whole30. But it is also great for breakfast with some protein on the side, or a snack if you need to have one.
My favorite way to eat this is for breakfast along with eggs and some veggies. I love a sweet and savory breakfast and this chia pudding hit the spot on the sweet note. Especially with fresh fruit on top.
Although, it is not too sweet. Sweet for the Whole30, but by a lot of other peoples standards, it would not be sweet. It is made from the strawberry cashew milk that I posted a few weeks ago. That recipe is already super simple, and all you need to do is add chia seeds and let it sit overnight. Three ingredients and hands off? Sign me up!
At the end of the Whole30, easy is the name of the game. At least for me. Even though I love to cook and did meal prep previously, this prepping and planning is a lot more than I am used to. If you weren’t prepared for dinner (or any meal), you can’t just order takeout or what not.
I will definitely be making this post-Whole30 though. Chia seeds contain healthy fats and 5 grams of fiber and 3 grams of protein per one tablespoon! I add them to pretty much anything I can. Also, the strawberry cashew milk will be making it’s way into many of my smoothies. Post Whole30 of course 😉

Strawberry Cashew Chia Pudding
ingredients
- 1 1/2 cups strawberry cashew milk
- 2-4 tablespoons chia seeds (depending on thickness*)
instructions
- Add strawberry cashew milk to a bowl or large jar and whisk in chia seeds. If in a jar you can also just shake really well.
- Leave in large jar or pour mixture into two jars and place in the refrigerator for at least 4 hours or overnight to let gel.
- Top with fresh strawberries and cashews or eat as is.
- Enjoy!
