Actually yesterday was and it will be back into the 70s by the end of the week haha. But I am taking advantage of it while I can!⁠⠀ This recipe only calls for 6 ingredients and could not be easier! We love us some @lundbergfarms rice (ad) in our house, but sometimes I can get a little tired of plain white rice. Enter arroz verde - it's a typical Mexican side dish made of white rice that is cooked in broth and a pepper and herb puree consisting of jalapeños, poblano peppers, cilantro, parsley, onion, and garlic. And it's so so good - it's herby and spicy, goes with with just about any dish, and is so pretty, especially for the holidays. Instagram post 2184609382788247489_1686416349 Back home from Australia! It was absolutely amazing and we had the best time. The country is beautiful, the food is amazing, and everyone was so kind. Michael is probably sick of me telling him we should move there haha. It felt great to disconnect and not be so dependent on technology to fill time. During our 2 weeks away, I ate whatever I wanted - lots of bread and dessert were pretty much occurrences every day. We also ate out for two weeks straight, although it was so easy to eat healthy there as they place so much emphasis on local/fresh/organic. And I didn’t workout AT ALL. We got in a lot of steps each day, but that was the extend of it, besides a little hiking and surfing. And I honestly feel great coming back home unlike the usual bloated and inflamed I usually do after vacation. This break from my daily routine was just want my body and mind needed. It's hard, but letting yourself live and forgetting all the rules you create for yourself feels so good. Whether that is you need to workout x times a week, carbs are for the weekends, or you can only have dessert if you worked out. It’s a hard cycle to break and has taken me years (and I’m still a work in progress), but it feels so nice to just enjoy yourself. I’ll be slowly starting to get back into my normal routine with a few adjustments after doing some reflecting awhile being away. Well not Cashew unfortunately, but Michael and I are heading to Australia for 2 weeks to celebrate our one year wedding anniversary/delayed honeymoon. So excited to explore a new place, relax, eat some good food, and have some quality time with my husband.⁠⠀ During our vacation, I will be completely disconnecting from work and social media. No emails, no Instagram stories, and no computer 🙌🏻 I am discovering that in this day and age, we are so inclined to constantly share and show people the details of our lives, and sometimes we forget to just be. To take in the meal, the adventure, the celebration, the honeymoon, or whatever it is, no sharing needed.
