If you want to bump up the protein at breakfast, you have to try these cottage cheese eggs. They are easy to make, super creamy, and so delicious!

I’m usually a fried egg kind of girl, but my Instagram blew up with messages about adding cottage to scrambled eggs. I love cottage cheese so I figured I would give it a go. And it turned out so good! Since starting to make them over a year ago, I rarely make fried eggs anymore.

The cottage cheese adds a great cheesy flavor while helping to pump up the protein. I always aim for 30+ grams of protein at breakfast and this is my go-to way. And if you don’t like cottage cheese, don’t worry, you can barely taste it.

They come out like soft scrambled eggs and are so good!

  • customizable – adjust the ratio of ingredients or add in some veggies or spices. You really can’t go wrong!

Can you put cottage cheese in scrambled eggs?

Cottage cheese is easy and delicious to add to scrambled eggs. It helps make them super creamy, adds a slightly cheesy taste, and increases the protein while not adding a lot of fat. Once cooked, the cottage cheese almost melts into the eggs and you won’t even know it is there!

How much cottage cheese to add to eggs?

The amount of cottage cheese you add will depend on how many eggs you are making. I use 1/3 cup for 3 eggs and it’s the perfect balance. If making 2 eggs, I would use 1/4 cup of cottage cheese. If making 4, use 1/2 cup.

  • cottage cheese
  • salt and pepper
  • butter or oil, for cooking
  • optional toppings – fresh herbs, salsa, hot sauce…

How to make cottage cheese eggs

  1. Make your egg mixture. In a medium-large bowl, add eggs, cottage cheese, and some salt and pepper. Whisk to combine.
  2. Heat up a medium non-stick skillet over low heat. Once hot, add oil or butter and let it melt/get hot, about 15-30 seconds. Pour in your egg mixture into the pan. Let sit without stirring for about 5-10 seconds and then continuously move eggs with a spatula until cottage cheese has been incorporated into the eggs and they are cooked to your preference. This should take anywhere from 2-4 minutes.
  3. Enjoy! Serve with your favorite sides.

Why are my cottage cheese eggs watery?

If your eggs are watery, you may need to cook them longer. Cottage cheese does release some water as it cooks, but it should evaporate by the end of the cooking process. It could also do with the brand of cottage cheese you are using as some are more creamy than others.

Blend your cottage cheese

I know cottage cheese can be super controversial. While it blends right into the eggs as it cooks, if you aren’t a fan of the texture, you can blend it beforehand. Simply add your cottage cheese to a blender or use an immersion blender and blend until smooth. Then mix it with the eggs.

How to serve

You can enjoy these eggs as is or serve them with sides. Here are some of my favorite breakfast sides:

  • toast
  • sauteed veggies
  • roasted potatoes
  • bacon or breakfast sausage
  • avocado
  • fresh fruit

Substitutions and additions

  • eggs – a mix of whole eggs and egg whites will work.
  • cottage cheese – low-fat or full-fat will work.

The variations for these eggs are endless. Here are some additions to change it up:

  • spices – anything from garlic powder, chili powder, paprika, and more!
  • herbs – top with some fresh herbs to add some freshness. Parsley, chives, or cilantro would all be good.
  • veggies – add in some veggies to make a veggie scramble. Sauteed onions, peppers, zucchini, and spinach would all work great.

    Let me just start off by saying… I am NOT a fan of cottage cheese but I will definitely be making these everytime I scramble eggs. The texture is phenomenal and the taste is amazing. You don’t even know cottage cheese is in them. Plus the added protein is a bonus!
