An easy snack, these Chocolate Peanut Butter Oat Cookies are only 5 ingredients, require 1 bowl, and help you stay on track when looking for something sweet.
Sometimes I just crave something sweet and chocolatey. As of lately it has been more so than not. But I don’t want to completely indulge in something I know will make me feel like crap and then will probably regret later. Like the few pieces of my sister’s graduation cake from this past week. It was delicious, but then my stomach hurt, I was bloated, and felt crappy afterwards. Not really worth it in my opinion. One day I will learn.
That is where these healthy cookies come in. I love having healthier treats on hand during the week when a craving hits. It is still a treat, but made with real wholesome ingredients that I know will make me feel good. Chocolate and peanut butter usually always does the trick for me. I was even using these as a pre-workout snack. The combination of carbs and healthy fats are a great source of energy to workout on, without feeling too full.
If you are anything like me and baking is not your forte, then this recipe is for you! These cookies only require 5 ingredients and you are more than likely to already have them on hand at your house. If you don’t have cacao nibs you can find them at just about any health food store and a lot of grocery stores too. They are also available on Amazon. You can totally skip them too if you don’t want to pick them up just for this recipe. I just like them because they add a little crunch and additional heath benefits.
Bonus is that this recipe only uses 1 bowl. When I am creating recipes in the kitchen I usually use multiple bowls, utensils, pans, and just about anything else I can get my hands on. It looks like a disaster afterwards. The cleanup process usually sucks, so one bowl recipes are a savior. Simply mash the banana, add the rest of the ingredients, and mix. Transfer to a pan and you only dirtied 2 dishes in the process of making the cookies. Yay for easy cleanups.
Chocolate Peanut Butter Oat Cookies
- 2 brown bananas
- 1/4 cup crunchy peanut butter
- 1-2 tablespoons cacao powder (depending on taste)
- 2 tablespoons cacao nibs
- 1 cup rolled oats*
- Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- Add bananas to a bowl and mash with a fork. Add peanut butter and combine.
- Stir in cacao powder, cacao nibs, and oats and thoroughly mix until combined.
- Scoop out 1 heaping tablespoon of oat mixture and place on baking sheet. Press down slightly to form a cookie. Repeat with remaining mixture.
- Bake for 12 minutes. Allow cookies to cool on baking sheet for 2 minutes.
