Grilled Carrots with Cinnamon & Chipotle

  • Light the grill over medium-high heat and let it come up to temperature.
  • Wash and peel your carrots.
  • Season carrots. Mix coconut oil, cinnamon, chipotle paste, chili powder, and salt in a small bowl. Rub mixture evenly all over carrots (using your hands is the easiest).
  • Grill. Place carrots on the hot grill over indirect heat and grill for 20-25 minutes, flipping and rotating occasionally (about every 7-8 minutes). Time will depend on the size of your carrots, and some might be done before others. Carrots should be slightly soft when you pinch them, but have a slight firmness towards the inside when done.
  • Enjoy! Transfer to a serving platter, top with cilantro if desired, and enjoy.
