  • 4 cups spinach
  • 4 cups baby kale
  • 2 cups diced cucumber
  • 1 large avocado, diced
  • 1/2 cup pomegranate arils
  • 1/4 cup hemp seeds


  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 1 heaping teaspoon dijon mustard
  • pinch of red pepper flakes (optional)
  • salt and pepper, to taste


  • Make the dressing by whisking all the ingredients together. Set aside.
  • Make the salad by mixing all ingredients together in a large bowl.
  • Drizzle the salad with dressing and toss to combine.
  • Enjoy!


Feel free to double the dressing. The recipe just lightly coats the salad, so if you like more, make more.
