  • 1 cup jasmine rice
  • 2 cups + 1 1/2 cups Dulcis Horchata, divided*
  • salt, to taste
  • 1 large egg, beaten
  • 1/2 cup raisins
  • 1/2 cup diced dried figs (about 7)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • optional toppings: Horchata milk, coconut yogurt, cinnamon...

  • In a rice cooker add rice, 2 cups milk, and salt. Turn on and cook until rice cooker goes off and rice is done. This can also be done on the stovetop according to instructions on the package.
  • Once done, in a clean saucepan add remaining milk (1 1/2 cups) and cooked rice. Cook for 10 more minutes over medium heat until thick and creamy. Add egg, raisins, dried figs, cinnamon, and vanilla and cook for 2 more minutes, stirring constantly.
  • Remove from heat and let cool. Top with optional toppings.
  • Enjoy!
