Ingredients

  • 1 tablespoon butter*
  • 1 pint cherry tomatoes
  • 1 container Cece's Veggie Noodle Co zucchini spirals (or 2 medium zucchinis, spiralized/300 grams)
  • fresh basil + more for topping
  • salt and pepper, to taste

Instructions

  • Add about 1 tablespoon butter (or ghee, coconut oil...) to a medium sauté pan over medium heat and let it get hot, about 30 seconds. Add a pint of cherry tomatoes and salt and sauté for 2-3 mins until blistered.
  • Turn down to low and add zucchini spirals, fresh basil, and salt and pepper. Sauté for about 30 seconds or until desired doneness. Top with more fresh basil and enjoy!
