Grilled Carrots with Cinnamon & Chipotle
Grilled Carrots with cinnamon & chipotle combine sweetness, spice, and a little smokiness for a flavor-packed appetizer or side dish to any meal. Perfect for spring and summer and you only need 5 ingredients. If you don't have a grill, you can also roast them in the oven! Paleo, Whole30, vegan, gluten-free, and dairy-free.
Light grill over medium-high heat and let it come up to temperature.
Wash and peel your carrots (peeling is optional), but can make for a prettier presentation.
Mix together coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub mixture evenly all over carrots (using your hands is the easiest).
Place on grill over indirect heat and grill for 20-25 minutes, flipping and rotating occasionally (about every 7-8 minutes). Time will depend on how thick your carrots are and some might be done before others. Carrots should be slightly soft when you pinch them, but have a slight firmness towards the inside when done. Enjoy!
