  • 2 1/2 cups cups cauliflower rice (285 grams)
  • 1/2 cup diced yellow onion (60 grams)
  • 1/2 cup diced red pepper (60 grams)
  • 1/2 cup diced green pepper (60 grams)
  • 2 teaspoons taco seasoning
  • 1/2 tablespoon avocado oil
  • 1/2 tablespoon lime juice
  • 2 tablespoons cilantro, roughly chopped
  • salt and pepper, to taste

Coconut Curry Cauliflower Rice

Green Goddess Cauliflower Rice

  • 2 1/2 cups cups cauliflower rice (285 grams)
  • 2 tablespoons packed parsley, roughly chopped
  • 2 tablespoons packed dill, roughly chopped
  • 1 tablespoon packed chives, roughly chopped
  • 1 tablespoon packed basil, roughly chopped
  • 1/2 tablespoon avocado oil
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Mushroom and Scallion Cauliflower Rice

  • 2 1/2 cups cups cauliflower rice (285 grams)
  • 6 medium mushrooms, sliced (131 grams)
  • 3 scallions, green and white part separated and chopped
  • 1 1/2 tablespoons coconut aminos
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon avocado oil
  • 1/2 tablespoon lime juice
  • red pepper flakes, to taste
  • salt and pepper, to taste

Cilantro Lime Cauliflower Rice

  • 2 1/2 cups cups cauliflower rice (285 grams)
  • 1/4 cup packed cilantro, roughly chopped
  • 1 1/2 tablespoons lime juice
  • 1/2 tablespoon avocado oil
  • salt and pepper, to taste

Instructions

Fajita Cauliflower Rice

  • In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add onion and sauté for 2 minutes, stirring occasionally. Add peppers and cook for another minute. Add cauliflower rice, taco seasoning, and salt and pepper and cook for 4-5 minutes until tender. Let cool for a minute and stir in lime juice and cilantro.

Cheesy Bacon Cauliflower Rice

  • In a large nonstick skillet over medium heat, add bacon and cook for 10 minutes, flipping once halfway through. Move to a paper towel lined plate and let cool. Remove all but a tablespoon of bacon grease and add cauliflower rice. Cook for 4-5 minutes until tender. When the cauliflower rice is almost done, add coconut milk, nutritional yeast, and salt and pepper and stir to combine. Turn off heat and crumble bacon into the rice along with chopped scallion. 

Coconut Curry Cauliflower Rice

  • In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add cauliflower rice, coconut milk, curry powder, curry paste, and salt and pepper and cook for 4-5 minutes until tender. Stir in lime juice once done.

Green Goddess Cauliflower Rice

  • In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add cauliflower rice and cook for 4-5 minutes until tender. Turn off heat and let cool for a minute or two. Stir in lemon juice, parsley, dill, chives, basil, and salt and pepper.

Mushroom and Scallion Cauliflower Rice

  • In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add whites of scallions and sauté for 30 seconds. Add mushrooms and sauté for another minute. Add cauliflower rice, coconut aminos, garlic powder, and red pepper flakes and cook for 4-5 minutes until tender. Stir in lime juice, remaining scallions, and salt and pepper once done.

Cilantro Lime Cauliflower Rice

  • In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add cauliflower rice and salt and pepper and cook for 4-5 minutes until tender. Turn off heat and let cool for a minute or two. Stir in lime juice and cilantro.
