Two ingredients make this Watermelon Lime Ice, and easy and healthy treat that everyone will love!
Greetings from North Carolina! We are at the beach for a week with Michael’s family. His whole family plus a lot of his extended family rent a house every year in Topsail Island, NC and spend a week there. I am talking around 25+ people! It is a lot of fun to relax and hang out with his huge family. My family isn’t that big so it is a nice change to have everyone get together once a year for a vacation.
So since I’m at the beach, I’m gonna keep this short and to the point! First of all, do you guys call this water ice or Italian ice? Where I grew up (outside Philadelphia), it is called water ice. If you are from around there, you have definitely heard of Rita’s water ice. So that is just what we call flavored ice. Doesn’t matter what flavor or type it is, it is just called water ice.
When I say water ice in Austin, people are like what?? I think the more popular term is Italian ice? Either way, they are both pretty much the same thing, deliciously flavored ice.
This watermelon lime ice so simple to make. It only takes 2 ingredients and a little patience. The watermelon is frozen to make ice like consistency, leaving out the artificial flavorings. I added some lime for a little kick and help the blending process. You will need a high powered blender (I love my Vitamix!) or food processor. You can also just wait for the frozen watermelon to thaw a little for an easier blending process.

- 5 heaping cups cubed watermelon
- 3 tablespoons lime juice
- pinch of sea salt
- Place cubed watermelon on a parchment lined baking sheet or plastic cutting board and freeze for 5 hours, or until frozen.
- once frozen, remove from freezer and let sit for 5-10 minutes (this is just to make sure it is not rock not solid and a little easier to blend).
- Place lime juice, frozen watermelon, and sea salt in a Vitamix or high powered blender or food processor. Blend until watermelon is broken down into shaved ice type consistency.
